Nordic cinnamon roll waffles
The first taste that comes to mind when we think of Scandinavia is blueberries and cinnamon. We love this combination and it's not for nothing that our goat meal is available in the "Maca cinnamon roll" variety. But you can use it to make much more than just goatmeal. At some point we got bored, but then this waffle recipe came about! The whole kitchen smells of cinnamon in the afternoon when we bake waffles.
Ingredients
- 60 g goatmeal maca cinnamon roll
- 20 g maple syrup or honey
- 2 eggs (vegan: 2 teaspoons flaxseed with 2 tablespoons water)
- 100 ml water (or a little less)
- 30g oat flour
Toppings: Wild blueberries and cinnamon
preparation
Process all ingredients (except the toppings) into a homogeneous mass and fry in a waffle iron with a little coconut oil. For us the quantity makes about 4 small or 2 large waffles. We top it all off with wild blueberries and even more cinnamon.
Tip: If you like, you can also add some of the blueberries to the dough, then they will melt deliciously when baking, like in the picture below.
