Protein salad with lentil sprouts
The temperatures rise with the desire for fresh food! When preparing salads, you can let your creativity run wild in the kitchen. We have a summery lentil salad recipe with fried chicken for you that contains an unbeatable 50 g of protein but still has few calories. This will keep you full and full of energy for a long time - for all the activities you want to do in the summer.
Ingredients for the salad
50 g beluga lentils (uncooked)80 g chicken (shredded)
1 small red onion
1/2 romaine lettuce
1 tomato
5 walnut halves
1 tsp olive oil
1 tsp balsamic vinegar
Tip:
For an even higher nutrient content and better tolerability , you can let the lentils germinate. You'll find out how to do this in our next blog post.
Ingredients for the protein dressing
1 tbsp Lykaia goat proteinapprox. 70 ml water
Salt pepper
Herbs of your choice, e.g. parsley & chives
Why goat protein instead of yogurt dressing?
The A2 milk that makes up our goat protein is a more original type of milk that is still produced by sheep, goats and occasionally from certain breeds of cows.
For almost all people , A2 milk is much more digestible and easier to tolerate than conventional cow's milk . This also applies to the proteins from these types of milk. The so-called A2 protein from goat's milk has a structure that makes it more digestible even for sensitive people with, for example, autoimmune diseases and intolerances .

preparation
Soak the lentils in water overnight (approx. 12 hours) (optionally let them germinate for 2 days) and cook them for 10-12 minutes. Drain the lentils in a colander and rinse them with cold water.Chop all the ingredients for the salad (except the chicken), put everything in a bowl and mix the salad with vinegar and oil.
Fry the chicken in a little ghee or coconut oil and let it cook until tender at medium heat with the lid closed. Once the meat is cooked, season it with a little salt and pepper and garnish it on the salad.
Mix the dressing.
After you have removed the chicken from the pan and garnished it on the salad, briefly stir the dressing through the pan to absorb the aroma and drizzle it directly over the salad.

Why it's worth sprouting lentils
Lentils are generally very healthy. They contain proteins, minerals, vitamins, antioxidants and complex carbohydrates that ensure balanced energy levels and stable blood sugar levels.
Sprouting lentils increases the content of these nutrients and makes them significantly more digestible. So-called antinutrients such as phytic acid and lectins are reduced during germination, which can improve the bioavailability of the nutrients they contain.
